Spicy Cashew Dressing
Been craving Sweet Greens for a couple of weeks now, honestly because their dressings are so damn good! So I finally tried to remake my favorite one... Spicy Cashew and it came out amazingggg!
I literally couldn't be more excited- because 99% of the time you will love a salad because of the dressing, so top any salad with this dressing and it will be a hit! And if you do not have store bought cashew butter at home, no problem! You can easily make it, i did!
Spicy Cashew Dressing
Ingredients (makes 1 cup)
- 1/2 cup olive oil
- 1/2 cup lemon juice
- 1/4 cup cashew butter*
- 1 tsp red pepper flakes
- 1 tbsp minced fresh ginger
- 1/4 cup fresh cilantro
- 1 clove garlic
- 1 tbsp nutritional yeast
- 1 tsp onion powder
- 1/2 tsp ancho chili powder
Method
1. Place all ingredients in a food processor and blend on high until uniform and smooth
2. Add 1/8 a cup of water in to dressing and blend then repeat until preferred thinness! (I liked it with just 1/8 a cup of water- but 1/4 cup of water would work great also)
*** Add 2 cups cashews to the food processor, and blend on low for 8-10 minutes or until creamy, scraping down the sides with a spoon as necessary. Transfer to a jar and store in the refrigerator or a cool counter top!
