Cashew Cheese
I bet you can’t eat just one slice 🍕 it’s so damn good + guilt free !! Cauliflower pizza crust w/vegan cauliflower cashew cheese... a-ma-zing! Used double tomato base, tomato paste + tomato sauce, fresh basil, mushrooms + super simple cashew cheese:
2.5 cups of cauliflower (cut into florets)
1.5 cups of raw cashews
1/4 cup fresh basil
3 tbsp water (or oil if you prefer)
S+P
Serving size: aprox 3 cups of cashew cheese*
Boil cauliflower florets and cashews together in a large pot with enough water to fully cover. Cook for about 20 mins until cauliflower easily falls apart with a fork. Drain mixture and let cool for about 5 minutes.
Transfer mixture to a food processor, add water, s + p to taste and fresh basil. Blend for aprox 5 mins until smooth and creamy!
