Nopal en Salsa Verde
Can’t believe that this is one of my first “Mexican” dishes! Cactus or nopal is one my favorite vegetables and here is a super simple recipe that tastes amazing, and plus you’ll have left over salsa for other recipes too ✨ hope you enjoy it!!
Ingredients:
12 tomatillos, rinsed
1 serrano jalapeño
1/3 cup white onion
1/4 cup packed cilantro (+ more if you live cilantro like me)
1/4 cup lemon juice
1/2 tsp salt + pepper (+ more to taste)
Optional: 1-2 garlic cloves
5 cactus
1 green onion
Directions:
You can either boil the tomatillos in water or broil them in an oven for about 15 minutes.
Meanwhile in a food processor you can combine chopped onion, cilantro, lemon juice, salt and pepper.
Once the tomatillos are soften from being boiled, or blackened and blistered from the oven you can carefully transfer them to the blender. Then blend everything until mixture is mostly smooth.
Season to taste and store in a airtight mason jar.
And to make this delicious cactus recipe, you just need to chop 5 cactus into squares, and 1 green onion.
Place in a pan on medium heat and add in tomatillo salsa to your liking. I added in about 1 1/2 cups.
Raise heat to high and leave the lid off, this way the cactus will dry up!
Serve with avocado, season with cilantro and enjoy!!!
