Homemade Vegan Almond Butter Cups
Sweet , salty and absolutely addictive vegan treats //
Only two ingredients: vegan dark chocolate + almond butter!!
2 Cup of Lily's Unsweetened Dark Chocolate
1 Cup of Trader Joe's Creamy Almond Butter (or brand of choice)
Silicone Mold Cups
Optional: Add vanilla, sea salt and honey for almond butter mix for extra flavor
Directions:
Melt dark chocolate chocolate. Bring about an inch of water to a simmer in your saucepan. Set the heatproof bowl in the mouth of the pot, making sure the water doesn't touch the bottom of the bowl. Add 3/4 cup of dark chocolate and stir chocolate occasionally as it softens.
Coat all the edges and rims of silicone molds with chocolate, all the way to the top for large cups or just half way for smaller cups... depending the size you would like your cups to be. (I make different coating heights to have both large and small almond butter cup sizes- so I can eat them depending on my hunger! )
Place coated silicone molds in freezer for 15 minutes.
Meanwhile you can prepare your almond butter mix, if you wish to add 1/2 tsp of vanilla, 1/2 tsp of sea salt, 1 tbsp of honey. (I personally like it plain or with just vanilla and a pinch of sea salt).
Take silicone molds out of the freezer and add 1-2 tbsp of your almond butter mixture to fill center of the molds.
Melt 1/4 cup of chocolate, repeating melting directions above. Coat the top of the silicone molds with the melted chocolate and freeze 15 mins again. Then take out and ENJOY!
