Keto Almond Butter Cookie Skillet
So fricken delicious and easy!! Seriously can. not. stop. eating. these... almond butter chocolate chip cookies
Ingredients:
1 cup almond butter
2 eggs
1/3 cup monk fruit (or sweetener of choice- if replaced with stevia I could recommend 1/8 cup bc it's so sweet)
1 tsp baking powder
1/2 tsp vanilla bean paste (vanilla extract)
1/2 cup of @lilys_sweets_chocolate sugar free dark chocolate chips
Directions:
Preheat the oven at 180C or 350F.
Mix in all ingredients together, at the end add in the chocolate chips.
Coat skillet with coconut oil (if necessary) and bake in the oven for about 12 mins! Keep an eye out for them I like my skillet cooked on the outside and gooey on the inside, so I recommend taking it out at 10 mins!
Top with ice cream and enjoy!
Notes:
I have tried this recipe with various forms of almond butter but the one that has worked the best- texture and consistency is Whole Foods Almond Butter, the one you manually churn.
I tried a batch with a little less than 1/3 cup of monk fruit sweetener and I liked it better. I believe between 1/3 and 1/4 a cup is the sweet spot!
I have made this cookie mix in a baking pan then cut into squares, in regular cookie form and in the skillet.
My all time favorite has been the skillet. It has allowed the mix to cook on the outside and remain goey on the inside!

⅓ taza monk fruit
1 cucharadita polvo para hornear

1/2 taza chocolate oscuro sin endulzar
Método de preparación:
Precalentar el horno a 180 C o 350 F.
Mezclar todos los ingredientes en un tazón mediano.
Vaciar en un sartén para hornear.
Hornear 10-12 minutos y servir con nieve deliciosa y compartir.
