Raw Vegan Lime Pie
This pie is seriously my new favorite dessert… and to think that I didn’t even like lemon pies before trying this one.
I was super hesitant to try it and once I took one bite there was no going back. I can easily eat the whole thing but I have to control myself.
RAW VEGAN LEMON PIE✨
Crust:
1 1/2 cups of almonds
3 dates
1/4 cup agave (or honey)
1 tsp vanilla extract
1 cup coconut flakes
Pinch of salt (1/8 tsp)
Filling:
1/4 cup lime juice
2 cups cashews
1/2 cup coconut oil
1/2 cup agave (or honey)
Pinch of salt (1/8 tsp)
Soak almonds, cashews + dates for 8 hours
This softens the nuts and dates
Drain the nuts and dates
Add all crust ingredients in your food processor + blend for about 2 minutes
In you pie pan place the crust mixture and flatten it out evenly
& refrigerate !!! Add all filling ingredients in your food processor until smooth consistency
Pour into crust and smooth with a spoon
Cover and refrigerate for about 2 hours before decorating and serving !
