Cinnamon Raisin Paleo Granola!!!!
What’s better thank waking up to a cozy grain free homemade granola packed with a crunch! Perfect to top of any yogurt, smoothie bowl or pancakes... delicious and healthy, enjoyyy🥄
Ingredients
1 cup raw almonds, roughly chopped
1 cup raw pecans, roughly chopped
1/2 cup raw walnuts, roughly chopped
1/2 cup pepita seeds
1/2 cup unsweetened coconut flakes
1/4 cup flaxmeal
1/2 tsp cinnamon
1/4 cup date syrup (maple syrup or honey)
1/4 cup liquid coconut oil
1/2 tsp vanilla extract
1/3 cup raisins (or any other add in)
Directions
1. Preheat oven to 350 degrees and line a large baking sheet with parchment paper
2. In a large bowl, mix together the almonds, pecans, walnuts, pepita seeds, coconut flakes, flaxmeal and cinnamon and evenly toss
3. Pour in the date syrup, coconut oil and vanilla extract and mix well to evenly combine
4. Pour the granola on the baking sheet and press down (preferably a thin single layer it will be crispier!)
5. Bake in oven for 15 minutes then rotate the baking sheet and bake for another 10 minutes
6. Remove from oven (it should be one large cluster) and allow the granola to cool completely, undisturbed (at least 45 minutes)
7. Break the large cluster into smaller pieces and enjoy!
8. Store the granola in an airtight container at room temperature for 1 to 2 weeks
