Golden Turmeric Cauliflower Soup
Eat pretty feel pretty- I’ve been eyeing this golden turmeric cauliflower soup for some time, finally got the chance to have my take on it- it’s super simple and ready in 30 minutes!
Ingredients:
1 tbsp avocado oil
2 minced garlic cloves
2 green onions
1 tbsp turmeric
1 1/2 tsp sea salt
1 tsp black pepper
1 head cauliflower
3 cups water/vegetable broth
2 cups unsweetened original almond milk
1/2 lemon juice
Directions:
Sautée the oil, garlic, onions, turmeric, salt and pepper. Then add in chopped cauli.
Add in water and simmer with cover on until soften.
Add in almond milk and transfer to the blender.
Once blended return soup to your pot- add in more s+p to taste and half a lemon juice and enjoy!
Garnish with cilantro and crispy chickpeas if you’d like 💫
