Creamy Roasted Pepper Tomato Sauce
Vegan Pasta 🍝 got some zucchini noodles in a creamy tomato sauce topped with sautéed mushroom (cumin powder, salt and pepper) and @daiyafoods cheese
Ingredients:
3/4 cup cashews
3/4 cup water
1 tsp salt
1 jar of tomato sauce
2 roasted red peppers (in oven 30 min prior)
Roast diced red peppers in the oven at 350 for 30 minutes. Remove from oven and allow to cool. Once cooled, add all ingredients into a food processor or blender and mix together for about 6 minutes until smooth and creamy consistency.
