Cauliflower Tacos al Pastor
In honor of Mexicos Independence Day I was decided on making this traditional recipe of Tacos al Pastor veggie version. I tried a similar recipe while in NY and was amazed by the flavors.. so here is my take on it
Ingredients:
2 garlic cloves
2 tbsp ancho chili powder
2 tsp paprika
2 chipotle adobo peppers
1/2 cup pineapple juice
¼ cup white vinegar (or apple cider vinegar)
1 cups fresh pineapple chunks divided
2 tbsp avocado oil
1 head cauliflower cut into florets
½ of a red onion thinly sliced
Fresh cilantro for serving
Tortillas or lettuce cups for serving
Lime wedges for serving
Directions:
In a food processor combine the garlic, ancho chili powder, paprika, chipotle chilies, pineapple juice, vinegar and 1 cup of the pineapple chunks.
Blend until completely smooth. Set the al pastor sauce aside.
Heat a large skillet over medium-high heat and add the olive oil. Add the cauliflower and onions, season with salt + pepper.
Cook for 12-15 minutes or until the cauliflower is tender and the onions have caramelized.
Reduce the heat to low stir in the al pastor sauce. Simmer for 8-10 minutes or until the sauce has coat the cauliflower.
Remove from the heat and stir in the cilantro. Divide the cauliflower mixture among the warmed tortillas, drizzling each taco with the remaining sauce left in the pan. Top each taco with fresh cilantro, lime juice and EAT
