Chickpea + Sweet potato Buddha Bowl
Chickpea + Sweet potato Buddha Bowl for lunch today, and the best part of all is that I whipped it up in less then 20 minutes (I did have the sweet potatoes + dressing pre made tho) ✨
Serving size: 2 ppl
Ingredients:
1 can of chickpeas, drain + pat dry
1 1/2 tbsp of spice blend (my blackened spice mix would work great!) 1/2 sweet potato
3/4 red onion
1/2 avocado
8 cups spinach
Dressing of choice *mine was my almond butter dressing, hubbys fav is the simple tahini dressing
Directions:
Pat down with a towel the chickpeas, the drier the better
Cook stove top on medium heat the chickpeas with spice blend of choice, stir around occasionally- for about 12 minutes
Grill red onion slices until you get a nice char
Sweet potatoes (were precooked, so I just heated it in the oven and grilled them for 2 minutes on each side.) Assemble bowls, 4 cups of spinach each, divide the chickpeas, red onion, sweet potato, 1/4 avocado each, added cilantro on top
Drizzle your fav dressing and enjoy!!! So hearty, delicious + filling !
