Cauliflower Fried Rice W/ Mushrooms + Kale
This cloudy weather has me in the mood for something cozy... and this Cauliflower Fried Rice W/ Mushrooms + Kale was the perfect healthy lunch
Easy, quick & delicious !
Ingredients:
1 cauliflower head riced
1 green onion
5 mushroom bulbs
3 cups of baby kale (or spinach)
2-3 tbsp coconut aminos (or tamari)
Directions:
In a medium heat skillet add in riced cauliflower + chopped green onion (tips as well)
Cover the skillet with the top and allow to cook for 10 minutes
No oil or water necessary bc cauliflower already lets off so much steam
Then add in chopped mushrooms + kale
Add in salt and pepper to taste + 2-3 tbsp of coconut aminos to season (tamari would work great as well)
Cook for another 10 minutes- stirring occasionally
Serve with avocado, fried egg on top or even one of my tahini dressings and enjoy !!!
