Basic Roasted Veggies
Eat more plants 🌱 whether you are a carnivore, pescatarian, keto, paleo... whatever you label yourself veggies can never do you wrong. Sometimes we get so wrapped up into our “label” that you forget what is healthy and what’s not! So I recommend... stop labeling and putting yourself in a box and start eating healthy real foods, it’s really liberating! So here is a recipe going back to basics...
BASIC ROASTED VEGGIES
(that are seriously delicious...)
1. Chop any and all veggies you have on hand (I had 1/2 brĂłcoli, 5 brussel sprouts, 1 zucchini, 1/4 red onion and 1/2 cup purple cabbage)
2. Once on the pan, drizzle with a little avocado oil to coat (about 3 tbsp) sprinkle with salt, pepper and garlic powder (aprox 1/4 tsp each).
3. Rub the oil and seasonings into the vegetables and arrange into even layers so there isn't much or any overlap. Then bake at 350 F or 180 C until golden brown and tender (about 40 mins)
4. Top with fresh cilantro and enjoy!!! These go great as a side with any protein, salad topping or as snacks for dips!
