L.E.O. Omelette
L.E.O. Omelette (lox, egg + onion). Inspired by my favorite restaurant in NY Sadelle's I had to recreate this dish they serve which is so incredibly delicious, and guess what it is so similar and frkn amazing! You have to try it!
Serving size for 2 persons
Ingredients:
Omelette:
1 tbsp avocado oil (or oil of choice)
1/4 white onion thinly sliced
1 green onion + 1/2 of the green tip
5 eggs
Salt and pepper
200 grams smoked salmon (or enough to fully cover the omelette)
Dill and/or chives
Dressing:
1/2 a pack of light Cream Cheese
1 1/2 lemon juice
Directions:
Cook onion on a skillet with oil and allow to caramelize
Whisk eggs in a bowl, add salt and pepper to taste.
Then pour eggs into the same skillet where the eggs have been caramelized
Cook at medium heat
Cover and allow to cook for about 3 minutes
Meanwhile mix together cream cheese + lemon juice and whisk until smooth consistency
Serve omelette on a large plate, should easily slip onto plate.
Drizzle cream cheese and garnish with dill or chives !!! And enjoyyyy !
