Homemade Healthy Chilaquiles
Chilaquiles are a breakfast staple in Mexico. There are red chilaquiles and green chilaquiles, depending on the type of salsa that you decide to make.
(Today I bought the salsas because I didn’t have the ingredients on hand to make it… and it simplifies the whole proceses to be honest. But fresh made salsa is definitely a game changer.)
But basically, chilaquiles start with a bed of corn tortilla chips, baked or fried. They are then topped off with salsa, fresh herbs, queso fresco, crema, an egg, and sometimes chicken or even pork.
Today I am going to share my very simple delicious version with salsa verde.
Homemade Healthy Chilaquiles:
For the Chilaquiles
4 packs of @sersano_alimentos baked tostadas (16 baked corn tortillas)
1/2 cup cheese of choice (manchego o chihuahua)
1 cup of salsa verde + more to taste
2 eggs fried
1/4 avocado
Thin slices of red onion to decorate
Cilantro leaves to top
Optional add ins: 1 tbsp mexican crema, 1/2 cup shredded chicken
Instructions
1. Add the salsa verde to a hot frying pan and cook for 15 minutes, making sure it is very hot to serve.
2. On your serving plate, half tostada pieces and top with cheese.
3. Then a separate medium heat skillet, add a little avocado oil and fry eggs. Cover with a lid so the egg evenly cooks.
4. Once eggs are fried. Pour the salsa verde over the tostadas and cheese. Top with fried eggs, slices of avocado, red onion and cilantro. Season with salt and pepper to taste and enjoy!! ________________________________
Para los chilaquiles
4 paquetes de tostadas horneadas
1/2 taza queso (manchego o chihuahua)
1 taza salsa verda + mas al gusto
2 huevos fritos
1/4 aguacate
Rajas delgadas de cebolla morada para decorar
Hojas frescas de cilantro
Opcionales: 1 cucharada de crema, 1/2 taza pollo desmenuzado
Preparación
1. Agrega la salsa verde a una sartén caliente y cocina por 15 minutos, aseguráte de que esté muy caliente para servir.
2. En su plato de servir, coloque los trozos de tostadas y cubre con queso.
3. Luego, en un sartén a fuego medio, agrega tantito aceite de aguacate y fríe los huevos.
4. Una vez que los huevos estén fritos. Sirve la salsa verde, luego los huevos y demás guarniciones y disfruta!
