Apple Cinnamon Bread
Combining my two favorite things... apples and cinnamon !!! Completley experimented with this recipe and it came out amazing, super moist, just enough sweetness + cinnamon and the perfect soft apple bits in every bite!! These would go great as muffins as well, they may even hold better too, because these are #vegan #glutenfree #lowsugar #lowcarb hope you enjoy it...
Apple Cinnamon Bread
Ingredients:
2 cups @bobsredmill almond flour
1/4 cup @lakantosweetener monk fruit
1 tbsp cinnamon
1 tsp baking powder
1/2 tsp sea salt
1 apple peeled and grated
3 tbsp flax meal + 7 tbsp water (soaked until gooey)
1/4 cup coconut oil
3/4 cup almond milk
1 tsp vanilla extract
Cinnamon swirl:
1 tbsp @healthworkschef cinnamon
1 tbsp monk fruit
1 tbsp coconut oil
Directions:
Preheat oven to 350 degrees and grease a bread dish with coconut oil or line with parchment paper
In a small bowl mix together the flax meal and water and allow to soak for about 10 minutes until thick consistency
Peel and thinly chop the apple
In a medium bowl mix together oil, almond milk and vanilla extract until smooth
Fold in apple slices into the liquid ingredients.
In a large bowl mix together almond flour, monk fruit, cinnamon, baking powder + sea salt evenly
Combine wet and dry ingredients until smooth consistency
In a small bowl mix together the swirl ingredients
Add half the batter to the bread dish then the cinnamon swirl mixture then rest of the batter and spread evenly
Bake in oven for 50-60 minutes or until fully baked

Pan de manzana con canela
Ingredientes:
2 tazas harina de almendra
1 cucharada canela
1 cucharadita polvo para hornear
1/4 taza azúcar de monk
1 manzana pelada y rayada
3 cucharadas linaza molida + 7 cucharadas agua (remojado)
1/4 taza aceite de coco
3/4 taza leche de almendra
1 cucharada de vanilla
Relleno de canela
1 cucharada canela
1 cucharada azúcar monk
1 cucharada aceite de coco
