Mini Chocolate Chip Tahini Cookies
These babies are #SugarFree #Vegan #GlutenFree & seriously addictive! The best part is that the recipe requires clean, minimal ingredients and is:
Ingredients:
1 cup almond flour
1 cup tahini
1/2 cup monk fruit sweetener
5 tbsp aquafaba frothed
1 tsp vanilla extract
1 tsp baking soda
1 heaping cup vegan chocolate chips
sea salt flakes for topping
Instructions:
Preheat oven at 350F or 180C
In a medium bowl mix almond flour, tahini, monk fruit, vanilla extract and baking soda together.
In small bowl add in the aquafaba and whip until foamy, can do this with a fork or with a frother.
Then combine aquafaba with the rest of the mixture until smooth consistency.Fold in chocolate chips.
On a lined baking sheet, scoop dough and form mini sized cookies (or regular is you like). Sprinkle sea salt flakes on top. Bake for about 8-12 minutes. Remove from the oven and let cool.
I recommend undercooking them, so that they are nice and crispy on the outside and SUPER CHEWY on the inside. Enjoy with almond milk + have your life changed forever 🍪 🥛*Tip: instead of aquafaba, a flax egg could work (1 tbsp flax + 3 tbsp water)
if you are not vegan, you can replace the aquafaba with 1 egg

Direcciones:
Precalentar el horno a 350F o 180C
En un bowl mediano, mezcla la harina de almendra, tahini, monk fruit, extracto de vanilla y bicarbonato de sodio.
En un bowl chico, agregar el aquafaba y con un tenedor batir hasta que este espumoso (puedes usar un ‘frother’) Combina el aquafaba con el resto de la mezcla hasta lograr una consistencia homogénea.
Revuelve las chispas de chocolate.
En un sartén formar las bolas de galletas. Agregar al gusto tantita sal de mar.
Hornear por 8-12 minutos, recomiendo que queden suaves y no tan cocidas.
Retirar y dejar enfriar. Disfrutar con leche de almendra 🍪 🥛*Tip: si no eres vegano puedes reemplazarlo por 1 huevo
