Extra Crispy Sweet Potato Wedges
Sweet potatoes could my favorite veggie of all time... and yes I do count them as veggies, aka unlimited always. These are thick and crispy oven baked sweet potato wedges- a delicious snack or side.
Extra Crispy Sweet Potato Wedges
Ingredients
2 large sweet potatoes
2 1/2 tbsp avocado oil
1 1/2 tsp salt
1 tbsp Italian seasoning
1/2 tsp black pepper
1/4 cup cilantro to garnish
Instructions
Preheat oven to 450 F or 220 C
Slice the sweet potatoes in half (lengthwise), then cut each piece into wedges
Place the sweet potato wedges in a large bowl, then add avocado oil, salt, seasoning, and black pepper. Mix well, making sure each wedge is coated with oil and spices. Lastly toss in cilantro.
Arrange the sweet potato wedges in a single layer on the prepared baking sheet. Bake for 40 minutes, flipping the wedges over half way through, until they're well browned and crispy.
Cool wedges on pan for 5 minutes, then serve at once with any dip you’d like- my veggie avocado dip goes great with these or a cashew ricotta- really anything!!

Ingredientes:
2 camotes grandes
2 1/2 cucharadas aceite de aguacate
1 1/2 cucharaditas sal de mar
1 cucharada especies mixtas italianas
1/2 cucharadita pimienta
1/4 taza cilantro
Preparación:
Precalienta el horno a 220 C
Corta el camote a la mitad (largo) y luego en trozos grandes
Coloca el camote en un bowl grande y agrega el aceite de aguacate y especies. Mezcla muy bien con las manos para que todas las papas de camote estén bien cubiertas y al final agrega el cilantro.
Coloca las papas de camote en una bandeja de hornear en una fila pareja, sin que estén unas encima de otras.
Hornea durante 40 minutos o hasta que se sientan suaves y se hayan dorado por fuera, hay que voltear las a la mitad.
