Oven Roasted Vegetables
Easy, pan roasted vegetables! Just one pan and simple seasonings. Tender, perfectly browned, and the perfect side to just about any meal or could easily be a super simple and nutritious lunch. And you could honestly throw in any veggies you have in the fridge!! Oven Roasted Vegetables:
INGREDIENTS
1 medium red onion
1 medium zucchini
1 large sweet potato
1 small cauliflower
1 cup brussels sprouts
5 garlic cloves
2 tbsp herb seasoning (thyme, oregano, rosemary etc)
4 tbsp avocado oil
1 tsp black pepper
1 tsp sea salt
INSTRUCTIONS
1. Preheat the oven at 220C.
2. Cut the red onion into wedges, the sweet potato and brussels sprouts into chunks, the cauliflower into florets and dice the garlic cloves.
3. Add everything to a baking tray and toss with the oil, salt, and pepper and seasoning or choice.
4. Lay veggies out evenly and bake at 220C for 50 – 60 minutes or until the veggies are cooked (oven times may vary) turn once in between.
5. Serve as a side or main dish, hot or cold with a drizzle of tahini, or dipped into some mashed avocado or hummus.
