Roasted Tomato Basil Soup

Roasted Tomato Basil Soup

Just look at the color. Simply gorgeous. This Roasted Tomato Basil Soup is delicious, flavorful and homemade! Its so so good alone or of course,  you’re more than welcome to make a grilled cheese sandwich to go with it. (Stay tuned for my upgrade grilled cheese recipe) Here is what you need for this warming soup:

Roasted Tomato Basil Soup
Serves 4
Ingredients
1 cup basil, fresh leaves
1 Garlic head
2-3 lbs roma tomatoes (about 8)
1 medium yellow onion
1/2 tsp Italian seasoning
Salt and pepper to taste
1-2 cups vegetable broth (thickness of choice)

Instructions
1. Preheat oven to 400 degrees F. Place halved tomatoes, garlic cloves and yellow onion on the baking sheet. Generously season with salt and pepper. Roast in the oven for 40-45 minutes.
2. Once roasted, allow them to cool for 10 minutes, then add them to a food processor or high powered blender. Next add basil and and Italian seasoning and blend until smooth.
3. After blending, transfer back to pot, turn to medium low heat.
4. Add in salt and pepper to taste and slowly add in vegetable broth until desired thickness is reached.
5. To serve, garnish with parmesan cheese and serve with grilled cheese, if desired.

Sopa de Tomato Rostizado

Ingredientes

1 taza de albahaca, hojas frescas

1 cabeza de ajo

2-3 lbs de tomates roma (aproximadamente 8)

1 cebolla amarilla mediana

1/2 cucharadita de sazonador italiano

Sal y pimienta al gusto

1-2 tazas de caldo de verduras (para lograr el grosor de elección)

Instrucciones

  1. Precalienta el horno a 400 F o 200 C. Coloca los tomates a la mitad, los dientes de ajo y la cebolla amarilla en la bandeja para hornear. Sazona generosamente con sal y pimienta. Asar en el horno durante 40-45 minutos

  2. 2. Una vez asados, déjelos enfriar durante 10 minutos, luego agrégalos a un procesador de alimentos o licuadora de alta potencia. Agrega albahaca y condimento italiano y mezcla hasta que quede suave.

  3. Después de mezclar, transfiera de nuevo a la olla, gire a fuego medio bajo. Agrega sal y pimienta al gusto y agrega lentamente el caldo de verduras hasta alcanzar el grosor deseado.

  4. Para servir, decorar con queso parmesano y servir con un sandwich de queso asado!!
