Blueberry Banana Bread

Bringing you just some delicious, feel good, nourishing food this week. With all of the fears & unknowns circulating right now I hope these comforting recipes give you a chance to cook and relax! Cooking and baking cozy recipes always brings me a sense of calm and I hope it does for you, too. 
This recipe for blueberry banana bread is a moist loaf of the classic sweet bread that’s chock full of juicy blueberries.
Blueberry Banana Bread


Ingredients:
3 ripe bananas mashed
2 eggs
1/3 cup greek yogurt
2 tsp vanilla
1 cup oat flour gluten free
1 tbsp maca powder
1/2 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1 cup of fresh bluberries

Directions:
1. Preheat oven to 350F or 180C.
2. In a medium mixing bowl, mash bananas and add in the rest of the wet ingredients.
3. Add in the dry ingredients (except the blueberries) and combine well until even consistency! Then fold in the blueberries.
4. Coat a baking pan with coconut oil and transfer the batter.
5. Bake for 40-50 minutes until golden brown and enjoy fresh or store for 5 days (if it lasts that long!)

Pan de Plátano con Moras


Ingredientes:
3 plátanos maduros
2 huevos
1/3 taza de yogurt griego
2 cucharaditas de vainilla
1 taza de harina de avena sin gluten
1 cucharada de maca en polvo
1/2 cucharadita de canela
1 cucharadita de polvo de hornear
1 cucharadita de bicarbonato de sodio
1 taza de bluberries frescos

Instrucciones:
1. Precalienta el horno a 350F o 180C.
2. En un tazón mediano, machuca los plátanos y agrega el resto de los ingredientes húmedos.
3. Agrega los ingredientes secos (excepto los blueberries) y combina bien hasta obtener una consistencia uniforme. Luego dobla los blueberries.
4. Cubre una bandeja para hornear con aceite de coco y transfiera la masa.
5. Hornea durante 40-50 minutos hasta que este dorado y disfruta recién hecho o guárdalo por 5 días (¡si te dura tanto tiempo!)
