Vegan Cinnamon Coffee Cake
I have always found it so weird that coffee cakes don’t even have coffee in them…. So for todays recipe I decided to switch it up!
Moist fluffy oat flour cake with two layers of cinnamon streusel crumble… and coffeee!!! This Vegan Cinnamon Coffee Cake is a delicious baked morning treat, the idyllic partner for a mug of weekend morning tea or coffee.

Ingredients
Cinnamon Coffee Cake
1 1/2 cup gluten free oat flour
½ cup coconut sugar
½ cup coffee
½ cup unsweetened applesauce
1/2 tbsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla extract
Pinch of salt
Streusel Crumble
1 1/2 cup almond flour
4 tbsp maple syrup
1 tsp cinnamon
Instructions
1. In mixing bowl, combine all the cake ingredients. Mix thoroughly.
2. In a separate bowl, combine the streusel ingredients and mix with your hands or a fork until crumbly.
3. Line a baking dish (or a loaf pan) with parchment paper or lightly grease with coconut oil.
4. Spread a thin layer (about half) of the cake batter into the bottom of the pan.
5. Cover with a thin layer of the streusel crumble mixture.
6. Top with the remaining cake batter and then the rest of the streusel.
7. Bake for 30-45 minutes at 350F.
8. Let the cake cool and enjoy this deliciousness!!

Ingredientes
Pastel De Canela Y Café
1 1/2 taza de harina de avena sin gluten
½ taza de azúcar de coco
½ taza de café
½ taza de puré de manzana sin azúcar
1/2 cucharada de levadura en polvo
1 cucharadita de bicarbonato de sodio
1 cucharadita de canela
1 cucharadita de extracto de vainilla
Pizca de sal
Streusel Crumble
1 1/2 taza de harina de almendras
4 cucharadas de miel de maple
1 cucharadita de canela
Instrucciones
1. En un tazón, combina todos los ingredientes del pastel. Mezclar bien.
2. En un recipiente aparte, combina los ingredientes del streusel y mezcla con las manos o con un tenedor hasta que se desmoronen.
3. Forra un molde para hornear cuadrado o de pan con papel pergamino o engrasa ligeramente con aceite de coco.
4. Extiende una capa delgada de la masa de pastel y una capa delgada de la mezcla de crujiente y de nuevo con la masa del pastel.
5. Hornee durante 30-45 minutos a 350F.
